- 200g Smoked salmon
- 200g Double cream
- 1/2 Juice of a lemon
- A pinch Cayenne pepper
- To taste Salt
- To serve Melba toast
- To garnish Cucumber
- To garnish Dill sprigs
- To garnish Lemon
Method
- Step 1Cut the salmon into small pieces and put in a food processor, blend until smooth.imagename Desire Matte Black Food ProcessorPrice £64.99sku 24732
- Step 2Pass the salmon through a drum sieve into a bowl.
- Step 3Add a little of the cream and mix well, add a little more and mix well, repeat this until all the cream is mixed into the salmon.
- Step 4Season with a little salt and a pinch of cayenne pepper.
- Step 5Put the salmon mousse into a piping bag.
- Step 6Pipe some mousse onto each piece of Melba toast and garnish with cucumber, a dill spring and lemon.
