  • 200g Smoked salmon
  • 200g Double cream
  • 1/2 Juice of a lemon
  • A pinch Cayenne pepper
  • To taste Salt
  • To serve Melba toast
  • To garnish Cucumber
  • To garnish Dill sprigs
  • To garnish Lemon
Method
  • Step 1Cut the salmon into small pieces and put in a food processor, blend until smooth.

  • Step 2Pass the salmon through a drum sieve into a bowl.
  • Step 3Add a little of the cream and mix well, add a little more and mix well, repeat this until all the cream is mixed into the salmon.
  • Step 4Season with a little salt and a pinch of cayenne pepper.
  • Step 5Put the salmon mousse into a piping bag.
  • Step 6Pipe some mousse onto each piece of Melba toast and garnish with cucumber, a dill spring and lemon.
