Ingredients
  • 1 Pepper, deseeded;
  • 1 Yellow pepper, deseeded; cut into pieces
  • 1 Courgette, sliced; cut into pieces
  • 1 White onion, peeled; cut into pieces
  • 1/2 Chilli, deseeded; finely chopped
  • 80ml Olive oil
  • 200g Cous-cous
  • 1 tsp Paprika
  • 1/2 Lemon, juice
  • 1/2 bunch Fresh chives, chopped
  • 1/2 bunch Fresh parsley, chopped
  • To taste Salt and pepper
Method
  • Step 1Pre heat an oven to 180ºC. Mix the peppers, courgette, onion, chilli, seasoning and 60ml of the olive oil in a bowl.
  • Step 2Transfer to a baking tray and cook in the oven for 6-8 minutes until soft. Remove and set aside to cool.
  • Step 3In the meantime, add the couscous to a heat proof bowl and add the remaining olive oil.
  • Step 4Pour over 300ml of boiling water, cover the bowl with cling film and set aside for 8-10 minutes until fluffy and all water has been absorbed.
  • Step 5Break up the couscous with a folk and mix in the cooked vegetables, herbs, paprika, lemon juice, seasoning and some more olive oil to taste.
