  • 125gdigestive biscuits
  • 25gdemerara sugar
  • 50gbutter, melted
  • 375gcream cheese
  • 75gIcing Sugar
  • 150mlDouble Cream
  • Few Drops pink, green, yellow, orange food colouring
  • To decorateMini eggs
Method
  • Step 1For the base, place the chopping blade in the food processor and add the biscuits and the sugar. Blend until a coarse breadcrumb texture then add the butter and blend again until well combined. Divide the mixture evenly between the mini Kilner jars or pots.
  • Step 2For the filling, first, clean the food processor bowl and then add the cream cheese and icing sugar. Blend until combined then remove and place in a mixing bowl. Next, using the whipping attachment, whip the cream until soft and peaks.
  • Step 3Fold the whipped cream into the cream cheese mixture until well combined. Divide the mixture into 4 equal amounts. Add a few drops of a different food colouring to each and gently mix. Put each of the different coloured mixtures into separate piping bag.
  • Step 4Pipe in dollops on top of the base until each jar/ pot is full. Refrigerate for at least 20 minutes. Decorate with the mini eggs.
