Ingredients
- 1tbspCoconut oil
- 600mlChicken Stock
- 1White Onion
- 1Red Onion
- 4Chopped Garlic Cloves
- 2Fineled Chopped Thai Red Chilli
- 3Chopped Ginger
- 2Lemongrass Sticks
- 6Kaffir Leaves
- 2 tbspFish Sauce
- 1 tspSugar
- 2Juice Lemon
- 10Chopped Mushrooms
- 14Large King Prawns
- (optional)Chopped Coriander
- 10Halved Cherry Tomatoes
Method
- Step 1Add the coconut oil to the multicooker and add the onions, cook for 5 minutes, then add the garlic, ginger, stock, chilli, lemon grass, lemon juice, sugar, fish sauce, chicken stock, kaffir leaves and half the coriander. - Step 2Add the mushrooms, tomatoes, king prawns and coriander and serve after 1 minute of cooking or until the king prawns are pink.
- Step 3Mix every thing together and squeeze in the lemon juice. Then chill.
