Ingredients
  • 1tbspCoconut oil
  • 600mlChicken Stock
  • 1White Onion
  • 1Red Onion
  • 4Chopped Garlic Cloves
  • 2Fineled Chopped Thai Red Chilli
  • 3Chopped Ginger
  • 2Lemongrass Sticks
  • 6Kaffir Leaves
  • 2 tbspFish Sauce
  • 1 tspSugar
  • 2Juice Lemon
  • 10Chopped Mushrooms
  • 14Large King Prawns
  • (optional)Chopped Coriander
  • 10Halved Cherry Tomatoes
Method
  • Step 1Add the coconut oil to the multicooker and add the onions, cook for 5 minutes, then add the garlic, ginger, stock, chilli, lemon grass, lemon juice, sugar, fish sauce, chicken stock, kaffir leaves and half the coriander. Boil for 15 - 20 minutes

  • Step 2Add the mushrooms, tomatoes, king prawns and coriander and serve after 1 minute of cooking or until the king prawns are pink.
  • Step 3Mix every thing together and squeeze in the lemon juice. Then chill.
