- 1onion medium-sized
- 3 tbspHoney
- 60gbutter
- 500mlhot vegetable stock
- 2-3Thyme sprigs
- to tastesalt and pepper
- to tasteLemon juice
- to garnishCrème fraîche and roasted pumpkin seeds
Method
- Step 1Preheat the oven to 200 degrees. While the oven is preheating, heat a deep roasting tray.
- Step 2In the meantime, peel the carrots, cut into even sticks and place in a bowl.
- Step 3Then peel and thinly slice the onion before adding it to the carrots.
- Step 4Add the olive oil, honey, butter, thyme and spices and mix well.
- Step 5Pour the mixture onto the hot baking tray and roast for 20-30 minutes until the carrots are soft. Stir a few times during roasting.
- Step 6As soon as the carrots are roasted, remove from the oven and place in the blender with the stock. Leave to cool slightly before pureeing.
