Ingredients
  • 1 Onion
  • 1 tbsp Butter
  • 2 Large raw beetroot, peeled; chopped
  • 1 Potato, peeled; chopped
  • 2 cloves Garlic
  • 2 Beef stock cubes
  • To fill to 14 litre limit Water
  • To taste Salt and pepper
  • To garnish Cream (Optional)
Method
  • Step 1 Peal and chop the onion, the beetroot and the potato into small pieces.
  • Step 2 Add these along with the butter to the soup maker.
  • Step 3 Cover with the lid and press the boil and steam function - this will begin to soften the vegetables.
  • Step 4 After a couple of minutes, press the manual blend button to mix the vegetables.
  • Step 5 If you wish, then repeat the boil and steam process again.
  • Step 6 Add the garlic, stock cubes, a good pinch of roughly ground pepper and enough water to reach the 1.4ltr marker on the inside of the jug.
  • Step 7 Replace the lid and select the smooth soup function.
  • Step 8 When the cycle has finished you soup will have cooked and blended. Test for flavour.
  • Step 9 Garnish with a little whirl of cream - very dramatic. So tasty!!
