  • 200gButter, softened
  • 200gGolden caster sugar
  • 1 tspVanilla extract
  • 4large free-range egg
  • 200gself-raising flour
  • 1tspBaking powder
  • 50gCocoa Poweder
  • 50mlMilk
  • 6-8Crème Eggs, cut in quarters
  • 200gButter Softened
  • 370gIcing sugar
  • 120gDark Chocolate
  • 80gCocoa Powder
  • 2tbspMilk, warm
Method
  • Step 1Pre heat your oven to 170°C with fan. Line the 2 cake tins with baking paper and set aside. For the cakes, first sift the flour, baking powder and cocoa powder into a bowl. Attach the whisks to your hand mixer. Add the butter, sugar and vanilla paste into a separate bowl. Whisk together until creamy and pale. Add the eggs 1 by 1, whisking in each time.
  • Step 2Next, whisk in the dry mixture along with the milk until well combined. Divide the mixture between the 2 cake tins and bake for 20-25 minutes until golden brown.
  • Step 3Leave to cool and then remove the cakes from the tins and leave to completely cool. For the icing, first melt the chocolate in a bowl either in a microwave or over a pan of water. Once fully melted set aside to cool slightly. Using the whisk attachments whisk the butter and sugar until light and fluffy. Add the cocoa powder and whisk in completely.
  • Step 4Next, whisk in the melted chocolate. To assemble the cake, lay the first cake down and spread some icing over the top then place the remaining cake on top. Cover the whole cake with the remaining icing and spread evenly over the top and sides. Top with the crème eggs.
