Introduction
Those classic Christmas flavours served up in a flaky filo pastry parcel and cooked to perfection!

Ingredients
  • 300g Brie, rind removed
  • 1/2 Onion
  • 1 tsp Olive oil
  • 1 tbspCranberry sauce
Method
  • Step 1Cook the onion in olive oil until soft and golden brown, leave to completely cool.
  • Step 2In a bowl add the brie and mix in the onion. Season and mix well.
  • Step 3Divide into 12 equal quantities. Cut the filo pastry into squares approx.
  • Step 410cm by 10cm, take 1 square and brush with oil, lay a second square on top at a slightly different angle.
  • Step 5Repeat again with 1 more square.
  • Step 6Place 1 piece of the brie mix in the middle of the pastry and spoon a little cranberry sauce on top of the brie.
  • Step 7Bring all the edges of the pasty together above the brie and squeeze tightly to seal.
  • Step 8Place the parcels on a tray lined with baking paper and cook at 180C for 10-12 minutes until the pastry is crisp and golden.
