Stilton and Broccoli Soup

A smooth and thick vegetable soup with a salty tang of stilton that's as good for a comforting meal as it is for a dinner party starter

  • 25g Butter
  • 1 tbsp. Olive oil
  • 1 Onion, roughly chopped
  • 1 Leek, chopped
  • 2 Broccoli stalks, cut into small florets
  • 1 small Potato, peeled and roughly chopped
  • 1 pt. Chicken stock
  • 4 tbsp. Double cream
  • Salt & black pepper to taste
  • 125g Stilton

Place the butter, olive oil, chopped onion and leek into your Russell Hobbs Soup Maker and select the Steam/boil setting.  After a couple of minutes press the manual mix button and the repeat the Steam/boil programme for another couple of minutes.   Add the broccoli, potato and stock, (do not exceed the 1.4 ltr line) and select the chunky soup option.  When ready add the double cream, season well and finally add the cheese, and select the manual blitz option for a couple of seconds until the cheese is mixed and melting.  Serve immediately with some crusty bread and a glass of wine.

Top Tip: If you are feeling very healthy replace the cream with crème fraiche or if you want it a little creamier, add more stilton.
