Brazilian Pork Stew (Feijoada)

Brazilian Pork Stew (Feijoada)

An easy to make one-pot take on a traditional Brazilian recipe; a perfect dish to serve at parties.

Ingredients
  • 900g pork shoulder or neck
  • 30ml vegetable oil
  • 2 white onions
  • 3 bay leaves
  • 1½ tsp ground cumin
  • 1 ½ tsp ground coriander
  • 2 400g tins chopped tomatoes
  • 30g dark brown sugar
  • 50ml red wine vinegar
  • 2 red chillies
  • 1 large sweet potato
  • 2 red peppers
  • 2 400g tins black eyed beans, drained
  • Salt and ground white pepper


Method

Serves 8-10

  1. Remove the searing pot from the slow cooker and put on the heat, add half the oil. Cut the pork into 2-3 cm pieces, season and brown in the pot in 4 or 5 small batches, once each batch is done leave to drain on a plate with paper and set aside.

  2. Finely dice the onions and chilli and fry with in the rest of the oil until lightly browned. Peel and cut the sweet potato into 1-2 cm pieces, de-seed and cut the peppers into 1-2 cm pieces.

  3. Add all ingredients to the pot making sure to drain the black eyed beans, season, bring to the boil, put the pot back into the slow cooker base and put the lid back on, cook on high for 5-6 hours.

  4. Cut the pork into 2-3 cm pieces, finely dice the onions and chilli, peel and cut the sweet potato into 1-2 cm pieces, de-seed and cut the peppers into 1-2 cm pieces, add all ingredients to the pot, season and cook on high for 7-8 hours.
