Ingredients
- 1 tspcumin seeds
- 6-8cardamom pods
- 1 tspground turmeric
- 1/2 tspcoriander seeds
- 2 tbspvegetable oil
- 2garlic cloves, finely chopped
- 1onion, thinly sliced
- 1 tspginger puree
- 1cinnamon stick
- 1red chilli, halved, deseeded and sliced
- 1large red pepper, deseeded and diced
- 4 cupsrice
- 4 cupsVegetable stock
- 1/2bunch fresh coriander, chopped
Method
- Step 1Heat the oil in a pan over a high heat and add the coriander and cumin seeds for approx. 20-30 seconds.
- Step 2Add the onion garlic, ginger, and turmeric and then fry for a further 1-2 minutes until golden in colour. Add to the pot.
- Step 3Add the rice to the pot followed by the pepper, cardamom pods, cinnamon stick, chilli and seasoning.
