Mexican Refried Beans

Mexican Refried Beans

A Tex-Mex staple that will complete you table. This refried bean recipe makes a great side dish for a Mexican feast.

Ingredients
  • 4 jacket potato
  • 250g cooked pinto beans
  • ½ onion
  • 2 garlic cloves
  • Oregano
  • Olive oil
  • Parsley
  • Sour cream
  • Salt and pepper to taste

Method: 

Serves 4

  1. Finely dice the onion and garlic. In a pan heat the oil and add the onions and garlic, cook for 2-3 minutes with no colour.
  2. Drain the beans and add to the pan, cook for a further 5-6 minutes, check seasoning.
  3. Cut open the jacket potato and spoon some of the bean mix into potato, top with grated cheese and grill
  4. Finish with chopped parsley and sour cream.
