Mexican Layered Bean Casserole

Mexican Layered Bean Casserole

A brilliantly easy sharing plate that everyone can enjoy! Tuck in and share as a starter or serve with rice or wedges for a fuller meal.

Ingredients
  • 2 medium courgettes, thinly sliced
  • 1 tin pinto beans, drained
  • 1 cup fresh salsa
  • 1 tablespoon oregano
  • 6 tortillas, halved
  • 100g Cheddar cheese, grated
  • 2 tablespoons fresh coriander
  • Salt to taste

Method: 

Serves 4-6

  1. Sprinkle the courgette slices with 1/2 teaspoon salt and set aside.
  2. In a bowl stir together the beans, salsa and oregano.
  3. Begin to arrange the ingredients in the following order: 4 of the tortilla halves, one-third of the bean mixture, one-third of the courgette and a handful of cheese. Repeat twice, while packing down the layers. Sprinkle with additional salt and the remaining cheese.
  4. Microwave on high for 10 minutes and then cover with foil and leave to stand for a further 5 minutes.
  5. Sprinkle with the coriander and serve.
