A perfect recipe for a warming bowl of soup on cold winter days
Firstly peel and chop the onion and add that with the olive oil to your Russell Hobbs Soup Maker and select the boil option. After a couple of minutes add the dry sherry and squash and select the blitz option for a couple of seconds to mix the ingredients then repeat the boil option for a couple of minutes again. Then add the stock and select the smooth soup option. When ready – taste and add the chilli salt (if you do not have that a pinch of chilli flakes and a good pinch of salt will do). The chilli should not make it feel too spicy; it is just to enhance the squash that tends to need a little help flavour wise in a soup.
Top tip: if you want a thicker soup – just add another 100 g of Squash to the mix when cooking.
