The Ultimate Chunky Minestrone Soup

A filling & flavorsome minestrone soup

Ingredients
  • ½ white Onion
  • 2 carrots
  • 1 stick celery
  • 1 Potato
  • 1 tbsp. Oil
  • 1 tbsp. Tomato puree
  • 1 tin chopped Plum Tomatoes
  • Water
  • 1 Chicken stock pot (you can use the vegetable alternative)
  • 50 g fresh Spaghetti
  • ½ tin Cannellini Beans
  • 3 slices Savoy cabbage
  •  ½ tsp. sugar
  • Salt & Pepper to taste 

Firstly peel and chop the onion, the garlic, carrots and celery and add that with the oil to your Russell Hobbs Soup Maker and select the boil option.  After a couple of minutes select the blitz button and blitz for a couple of seconds, and then add the peeled and chopped potato – again select the boil function for a couple of minutes.  Add the tin of chopped plum tomatoes and the same amount again of water, the stock pot and the tomato puree.  Select the chunky soup programme.  ). At the end of the programme add the cannellini beans, the shredded cabbage and the fresh spaghetti, (chopped into approx. 10 cm pieces and select the boil option.  After about 5 minutes your soup is ready to go! Enjoy after a walk in the autumn leaves. The ultimate comfort food!!
