Rocket and Thyme Soup

A super healthy green soup with a tasty twist!

  • 1tbsp. Butter
  • 2 shallots
  • 2 cloves Garlic
  • 4 oz. White wine
  • 1 large Potato peeled and chopped
  • 1pt. Chicken stock
  • Salt & pepper to taste
  • 1 bag of Rocket
  • 2 tsp. fresh Thyme – finely chopped (remove the stalks – they tend to be a bit woody!)

Toppings - optional

  • crème fraiche or plain yogurt
  • A few rocket leaves

Firstly peel and chop the shallots and the garlic, add these with the butter to the Russell Hobbs soup maker and select the boil and steam option – after a couple of minutes add the wine ( you can use the lid cup to measure it out  - 2 cups). Add the peeled and chopped potato and select the smooth soup option. After approximately 5 minutes add the stock (do not exceed the 1.4ltr mark) and let the program complete its time.  Once done add the rocket and blitz for a few moments until the rocket is mixed properly. Serve with a blob of crème fraiche or plain yoghurt and a few rocket leaves.

Top Tip – the rocket will lose a little of its colour if not eaten immediately but fear not, the flavour stays!
