Celery & Apple soup

Brimming with goodness, this tangy soup makes for a healthy and tasty option!

Ingredients
  • 30g butter
  • 1 Onion, peeled and chopped
  • 1 medium Potato, peeled and diced
  • 4 Celery sticks, chopped
  • 1 ½ pts  Vegetable stock
  • Salt & pepper to taste
  • 2 Dessert Apples, peeled, cored and chopped

Firstly place the butter and the diced onion in your Russell Hobbs Soup Maker and select the boil/ steam programme. After a couple of minutes add the celery, potato and stock – remembering to only fill to the 1.4 ltr line on the jug. Select the smooth soup function.  After around 10 minutes, peel, core and chop the apple and add it to the soup through the lid so as not to halt the cooking programme. Serve with a garnish of finely chopped apple or chopped celery leaves. 

Top Tip: if you really want to be decadent, at the end of the programme pour in 100ml of fresh cream or Greek yogurt and blitz for a few seconds. Naughty but o so nice!!
