Carrot & Coriander Soup

This Carrot and Coriander Soup is a traditional favorite that is perfect for warming you up on a cold day

  • 25g butter
  • 1 small onion, chopped
  • 1 Garlic clove, chopped
  • 400g carrots, sliced
  • 1.5 tsp ground coriander
  • 700ml chicken stock
  • 1 tsp. Tomato Puree
  • Salt and cracked black pepper
  • To serve:-
  • 75ml Greek yogurt or crème fraiche
  • 2 tbsp. freshly chopped coriander

Place the butter and the chopped onion and garlic into your Russell Hobbs Soup Maker and select the Steam/boil setting, leave for 60 – 90 seconds.

Add the carrots, ground coriander, stock and a good pinch of cracked black pepper.  Select the smooth soup program. When completed add the yogurt and select the manual blend program for a couple of seconds or until the yogurt is fully blended.  Taste and season as needed, and then select the sauce program.  After about 10 minutes it is ready to eat but the joy of this program is that it will keep your soup hot for around 1 hour, ideal if you have jobs to do! When you serve add a few flakes of fresh coriander to garnish!  A triumph that you will want to repeat over and over again.
