Spanish Chorizo and Potato One Pot

Spanish Chorizo and Potato One Pot

Bring a taste of the Mediterranean to the party with this delicious Spanish one pot recipe.

Ingredients
  • 30ml vegetable oil
  • 1 ½ tsp. smoked paprika
  • 2 red onions
  • 6 red peppers
  • 6 cloves garlic
  • 300g good quality Spanish chorizo sausage
  • 700g potato, peeled and cut into approximately 1-2 cm pieces
  • 600ml chicken stock
  • 100g brown lentils
  • 6g salt

Method

Serves 8-10

  1. Cut the chorizo into 1-2 cm pieces, cut the onions into approximately 1-2 cm pieces, de-seed the peppers and cut into 1-2 cm pieces, finely chop the garlic. Peel and cut the potatoes into 1-2 cm pieces. Select the steam function, add half the oil to the bowl and close the lid. After 4-5 minutes add the chorizo and cook for 6-7 minutes. Drain on paper and set aside.

  2. Add the rest of the oil to the bowl and fry the onions, garlic and peppers for 2-3 minutes. Add all ingredients to the bowl, press the cancel button, select the stew function.
