Ratatouille

Ratatouille

A delectable combination of cooked vegetables, this is a dish with plenty of oomph!

Ingredients
  • 1 small aubergine
  • 50g butter
  • 2 onions, chopped
  • 1 clove garlic, crushed
  • 1 green pepper
  • 1 red pepper
  • 400g canned chopped tomatoes
  • 3 courgettes
  • Salt and pepper to taste

 

Method (Serves 4)

  1. Preheat slow cooker on HIGH for 20 minutes.
  2. Dice the aubergine and sprinkle with salt. Leave for half an hour, rinse and pat dry.
  3. Melt the butter and fry garlic and onion until soft.
  4. Cube the peppers and courgettes.
  5. Combine all ingredients into slow cooker. Cook on LOW for 8 hours. Season to taste.
