Mexican Beef Chilli

Mexican Beef Chilli

A crowd-pleasing recipe that everyone will enjoy. Serve up this easy to make Mexican Chilli with minimal effort but full on flavour.

Ingredients
  • 30ml olive oil
  • 2 red onions
  • 1 red pepper
  • 3 cloves garlic
  • 2 red chillies
  • 1 tsp chilli powder
  • 1 ½ tsp ground cumin
  • 1kg beef mince
  • 2 400g tin chopped tomatoes
  • 300ml beef stock
  • 1 400g tin red kidney beans, drained
  • 9g caster sugar
  • 40g tomato puree
  • Salt and ground white pepper

Method

Serves 8-10

  1. Select the steam function, add the oil to the bowl and close the lid. Leave to heat for 3-4 minutes. Add the beef, seasoning and close the lid, stir the meat at regular intervals making sure to keep the meat from cooking in lumps.

  2. Cook for approximately 9-10 minutes or until the meat turns brown.

  3. Finely dice the onions, chillies, peppers and garlic, add to the bowl, add the rest of the ingredients making sure to drain the beans of any liquid, bring to the boil.

  4. Once boiled press the cancel button and then select the slow cooker function.

Serve with rice or nachos, soured cream, guacamole and grated cheese.
