Irish stew

An authentic Irish recipe made easy. Slow cooked for maximum taste this dish will become a weekly family favourite.

Ingredients
  • 30g olive oil
  • 850g lamb shoulder or neck
  • 5 rashers streaky bacon
  • 3 garlic cloves
  • 600ml lamb stock
  • 2 large onions
  • 2 carrots
  • 2 sprigs fresh rosemary, leaves
  • 2 bay leaves
  • 5 potatoes
  • 100g pearl barley
  • Salt and pepper to taste

Method

Serves 8- 10

  1. Cut the lamb into 2-3 cm pieces, cut the bacon into approximately 2 cm pieces, finely chop the garlic, dice the onion into approximately 1-2 cm pieces, peel and cut the carrot into 1-2 cm pieces, peel and cut the potatoes into 1-2 cm pieces.

  2. Add all ingredients to the pot, season and cook on high for 8 hours.
