Coriander, mint and cracked black pepper mayonnaise

Coriander, mint and cracked black pepper mayonnaise

A delicious combination of flavours which can be eaten as a dip or used to make fresh potato salad for those impromptu BBQ's.

Ingredients
  • 250ml vegetable oil at room temperature
  • 3 free range egg yolks
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh coriander
  • 1 tbsp fresh mint
  • 1 tbsp crushed black peppercorns Salt to taste

This is ideal stirred into some cooked new potatoes with spring onions and served as a salad.
Method

Makes: approx 500ml
  1. In a food processor add the egg yolks, vinegar and mustard, blend until well combined and starting to thicken slightly.
  2. Slowly add the oil whilst continuously blending until mixture becomes thick and creamy.
  3. Chop the coriander and mint and stir into the mayonnaise, add the crushed peppercorns and season to taste.
