Spice up your mayonnaise by adding chili and garlic for an extra kick!
Makes: approx 500ml
1. Puree the garlic and add to the food processor along with the egg yolks, mustard and vinegar, blend until well combined and starting to look fluffy and white.
2. Slowly add the oil whilst continuously blending until the mixture becomes thick and creamy.
3. Add the lemon juice, chilli flakes and season to taste.
Top Tip: This is ideal served with potato wedges.
