A simple tomato based relish which is easy to make and perfect on burgers and other summer BBQ treats.
1. Peel the garlic and shallots, deseed the chilli and chop all in the mini chopper. Wash the tomatoes, carefully remove the stalk with a knife and cut into approximately ½ cm pieces.
2. Put the olive oil in a pan and heat, add the garlic, shallots, chilli and cumin and cook for 5-6 minutes stirring at regular intervals, until soft.
3. Add the tomatoes, season and bring to the boil, simmer for 20-25 minutes, until the tomatoes are well cooked and all of the liquid is cooked into the relish. Check seasoning to taste and leave to cool.
This relish will store in the fridge for 2-3 days and is ideal served with a burger.
