Strawberry Meringue Roulade

Strawberry Meringue Roulade

Discover how to make a glorious strawberry meringue roulade - a dessert which is sure to impress.

Ingredients
  • 4 egg whites
  • Pinch salt
  • 200g caster sugar
  • 50g icing sugar
  • 300ml double cream
  • 1 vanilla pod, seeds scraped
  • 300g strawberries, hulled and sliced

Method (Serves 6)

  1. Pre-heat the oven to 180°C .Then whisk the eggs whites with a pinch of salt until they form soft peaks
  2. Gradually whisk in the caster sugar until stiff and glossy
  3. Fold in the icing sugar
  4. Spoon the mixture into the tin and smooth the surface with the back of a spoon
  5. Bake for 10 minutes then turn the temperature down to 120°C and bake for a further 15 minutes
  6. Turn the meringue out on to prepared paper covered in icing sugar and leave to cool
  7. Whisk together the cream and vanilla seeds
  8. Spread the mixture over the cooled meringue. Scatter over the strawberries
  9. Roll up tightly, using the paper to help. Once set transfer to fridge to chill. Then serve
