Jerk Chicken

Keep life irie with spicy jerk chicken straight from the grill.

Ingredients
  • 1 whole chicken, jointed and scored with a sharp knife
  • 4 spring onions, roughly chopped
  • 3 scotch bonnet chillies, deseeded
  • 2 tsp ground allspice 
  • 1 tsp ground black pepper
  • ½ tsp ground cloves
  • 1 tsp dried thyme
  • 1 tsp ground nutmeg
  • Juice of 3 limes
  • Pinch sea salt
  • 6 cloves garlic, peeled
  • 3 tbsp white wine vinegar
  • Thumb sized piece ginger, peeled and roughly chopped
  • Lime wedges
  • Salad leaves

Method (Serves 4)

  1. Add the ingredients for the jerk marinade to a food processor or mini chopper. Deseed chillies if you want less spice
  2. Blend until smooth
  3. Joint and score the chicken with a sharp knife
  4. Pour the marinade over the chicken and toss to coat
  5. Cover and leave to chill for 2 to 3 hours
  6. Pre-heat a grill to a high heat 
  7. Place the chicken in the grill and cook for 20-25 minutes 
  8. Once the chicken is cooked, serve with salad and lime wedges
