Bacon, Banana and Maple Syrup Porridge

Bacon, Banana and Maple Syrup Porridge

For those who are serious about breakfast. An unusual fusion of flavours makes this porridge recipe exquisite.

Ingredients
  • 140g porridge oats
  • 850ml milk
  • 12 rashers pancetta, grilled
  • 2 whole bananas, sliced
  • Drizzle of maple syrup
  • Garnish: - banana slices, crispy pancetta, maple syrup

Method: 

  1. Grill the bacon and set aside.
  2. Put the oats and milk in a pan and put on the heat.
  3. Bring to the boil and stir in the maple syrup and sliced banana, simmer for 4-5 minutes stirring constantly making sure it doesn’t stick to the bottom of the pan.
  4. Cut the cooked bacon into small pieces and stir into porridge and simmer for a further 1-2 minutes.
  5. To serve, garnish with some sliced banana, a drizzle maple syrup and extra crispy bacon.
